I think these are made from dry noodles. There's a kind of dry "knife cut" noodles (made to look like knife cut but extruded from machine) that you can buy in flushing from some grocery stores. One I can think of is the store on the NE corner of Main/41st ave have it on the left right when you walk in. I bought some there last weekend in fact!
